Matt O’Neill Named Executive Chef at Ajax Tavern

Aspen, Colorado (May 2, 2012) – The Little Nell is proud to name Matt O’Neill as the new executive chef at Ajax Tavern, the casual dining spot known for its lively patio and distinctive bistro fare.

“Matt joined the The Little Nell culinary team in December, and over the course of the winter season, his skills and experience have helped streamline the catering culinary operations as well as support the busy Montagna kitchen team,” said Little Nell Executive Chef Robert McCormick. “I’ve had the pleasure of working in several kitchens with Matt over the years, and I’m thrilled to have him at the helm of Ajax Tavern.”

Prior to moving to Aspen, Matt gained notoriety from the Boston Globe and the New York Times for his work as executive chef at PB Boulangerie-Bistro in Wellfleet, MA. Other highlights of Matt’s career include two years at the three Michelin starred Restaurant Daniel in New York and the grand opening of  Bar Boulud in Manhattan’s Upper West Side. 

“I’m excited by the prospect of taking over a small kitchen and having an intimate relationship with both the diners and the food,” said O’Neill. “Aspen is such a great foodie town, and I’m really looking forward to connecting with the community through new dishes and new events at the restaurant.” 

Matt will build on the established Ajax Tavern classics and continue to support local farmers and highlight their ingredients with creative French Bistro dishes guests and locals have loved over the years. The Tavern is open throughout Aspen’s spring off-season, bringing lunch and dinner to Aspen locals and visitors daily.

Matt replaces Allison Jenkins, who is returning to her home state of Texas to work as executive chef at a new restaurant venture in Austin.
